Wine&oil
Cascina Drezza was created in 2014 thanks to the passion and idea of Peter, with the aim of producing high quality wine and olive oil products.
And here comes the renowned and appreciated “Drezza Cuvée Brut Blanc de Blancs”, which “nectar” comes from the production of Chardonnay grapes.
The vineyard...
From the early interventions of the 70s and 80s, the production part was expanded with the purchase of further lands cultivated with vineyards, planting both red berried grape (Merlot and Cabernet Sauvignon) and white berried grape (Incrocio Manzoni, Chardonnay and Riesling Renano).
Today the vineyard covers about three hectares dedicated to the production of Chardonnay, Pinot Noir and Incrocio Manzoni grapes.
...and the farmer
Much has changed over the years in the estate and in the vineyard: the varieties of grapes, the position and care of the plants, the yields.
Unchanged over time, since 1962, are the love, passion and expertise with which Giuseppe Panza, known as “Pino”, takes care of the vineyard, so that an excellent wine is extracted from the grapes.
The grape harvest
From the end of July, the checks for the maturation evolution begin, so then, during the first days of August, the first samples of grapes to monitor the analytical parameters of the bunches are made.
The harvest starts as soon as the balance between sugar concentration and acidity reaches its maximum level.
The grapes are harvested by hand with a meticulous selection of the bunches.
At a later time, the grapes are transported, absolutely intact, to the cellar to be delicately pressed.
Vinification
The carefully selected grapes are brought to the cellar in order to be vinified.
The first pressing phase is extremely important: during this phase, the grapes are lightly pressed to extract exclusively the must, the heart of the grape.
By avoiding a long contact with the peelings and selecting only the first pressing stages, refined mineral sparkling wines are produced.
